Apple muffins

Will and I were walking around the property a few nights ago when we decided to wander into one of the many apple orchards. We picked a handful of ripe apples and brought them back to the cottage. Then I thought to myself, what can I do with all these apples…make apple muffins! After a few days of researching recipes and waiting to get a ride to the store, I was very ready to bake. Realizing I had only a toaster oven, no measuring spoons, measuring cups or whisk I knew it would be a challenge. So in honor of my master chef/blogger sister-in-law Allie, I present to you a very makeshift attempt to homemade apple muffins.

2 apples
1 cup sugar
2 cups of flour
2 teaspoons of baking soda
1/2 teaspoons of salt
1/2 teaspoon ground cinnamon
2 eggs
1 cup buttermilk
1 stick butter

preheat toaster oven to as high as it goes

nicely lay out all of the ingredients so it looks like you know what you are doing

find some apples

dice 2 small apples leaving 12 thin slices for garnish

whisk together ingredients (if you have one)

stir in apples

add buttermilk, butter and eggs to the mix

divide batter into muffin cups and bake until they are golden brown

and hope they turn out!

always a good sign
